Happy almost summer! Gheesh……. we thought it would never get here. In the past couple of weeks, we all got a taste of the hazy, hot and humid weather and Joy and I came up with some great drinks we call Summer Sippers!
This one is quite refreshing when served ice-cold. It is simply a cantaloupe melon mixed with mint. Melon is very hydrating, full of vitamins C and A and rich in antioxidants. Choose melons that feel a bit heavy for their size and check for bruises. Keep them un-cut in a cool dry place until ready to use.
Get creative and try different fruits, whatever your family prefers! Our Papa’s favorite fruit was melon of any kind. He would bring them home from our family grocery store. They were so big and beautiful back then — and that scent! Every time they are on my counter I can smell that sweetness and it takes me back to him…. OMG, what we wouldn’t do for just one more day! 1 cantaloupe, cubed
organic simple syrup, to taste, recipe follows
1 cup coconut water, add more if desired
1 lime, juiced
mint leaves, garnish
watermelon balls, garnish
Cube the melon; put into your blender or NutriBullet and process. If you feel you must strain your melon, go ahead and do so at this point.
Prepare simple syrup (recipe follows). Add all ingredients, blend, taste and adjust whichever flavor you feel it may need more of. Garnish with mint and melon cubes or balls; you can even add some vodka at this point, or a flavor-infused vodka would be amazing, if serving to adults. Enjoy!
2 cups spring water
2 cups organic sugar
Place the water and sugar in a medium heavy-bottomed saucepan and bring to a boil. Reduce heat to medium and simmer for 2 minutes until the sugar has dissolved and the syrup slightly thickens, stirring occasionally. Transfer to a bowl and let cool to room temperature. Pour into a squeeze bottle, or glass jar, and refrigerate for up to 1 month.
